We use almonds from a nearby farm, grown organically, but not certified organic. (All other ingredients are organic.) Then we roast and grind the almonds to make our almond butter. For the bar, we start by making the 62% cacao shell, with almonds encased in the top of the shell. Then a bit of coconut flakes–just enough for a nice background of coconut flavor. After that sets, we pipe the almond butter/cocoa butter/chocolate mix into the shell. Let that set, put on the bottom layer of 62% cacao chocolate, and you have a treat to satisfy any almond-and-chocolate lover’s desires.
